40x 40 - 36. Can My Own Vegetables

How long has it been since we last caught up.  A month!  Wow, where has the time gone????

We have been very busy around our house.  I really thought things would slow down once summer ended, but we seem to be more hectic then ever.  I will try to be better about checking in.

I can scratch another thing off my 40 x 40 list; thanks in big part to my mother-in-law who agreed to entertain me while the boys went to the Boise State football game.  When I approached her about teaching me how to can, she asked me what I wanted to make.  Because it was my first time, I wanted to make something that she was comfortable making so that we didn't have to worry too much about the recipe.  She agreed and we chose to make Christmas Relish.

Went spent the first day prepping all the food.  The vegetables needed to be prepped and soaked over night.

This included chopping green and red peppers, onions, and zucchini.

We got an early start the next morning.

Patty did a wonderful job of walking me through all the steps.

We slaved away over a hot stove all morning.

And when we were done, we had seven jars of relish.

We had so much fun.  Patty gave me the confidence and the excitement to come home and try on my own.  

On our way out of Ontario, we stopped at the most wonderful produce stand.

You can find just about anything at this produce stand.  It easy to get a little of this and a little of that and pretty soon you have a wagon full of food.

I was happy to see the boys as excited as I was.  This is all Nick's load.

The next weekend, using the box of apples I bought at the produce stand, I made apple pie filling and applesauce all on my own.

Yesterday I made eleven jars of salsa and fourteen jars of chutney.  

Now we just need to figure out where we are going to store all this goodness.
